Kahvi’s Glazed Lemon Pound Cake
Our D&D group recently finished the Dragon Heist campaign. While running the tavern, I made this (both in character and out of game for my fellow players). Turned out great, and I’m adding it to the tavern menu as a character specialty. The recipes was adapted from a traditional one with a personal touch of ginger. By happy coincidence, the lemon peels get used in limoncello.
- 1 1/4 cups unsalted butter, softened
- 1 1/2 cups granulated sugar
- 3 large eggs
- 1 teaspoons lemon extract
- 1/4 cup lemon juice (from about 2 lemons)
- 1 1/2 cups cake flour
- 1 teaspoons salt
- 1 tablespoons lemon zest (optional)
- 1 teaspoon finely ground ginger (optional)
Sift flour and cut in the dry ingredients. Gently whisk eggs to smooth consistency, do not froth/whip. Mix eggs and butter in to the dry ingredients in small portions until thoroughly integrated. Mix until any lumps are gone. Do not over-beat (aerate) the mixture.
Pour batter into a small, lightly greased loaf pan and bake at 350F for 40 minutes. Use a tooth pick to make sure it is fully baked if you are unsure. Allow to cool on a rack until it reaches room temperature.
Produces a small or half-loaf. Double ingredients for a full cake or large loaf and increase baking time to 50-60 minutes)
Lemon Glaze
- 1 1/2 cup powdered sugar
- 3 tablespoon lemon juice, at room temperature
Mix until smooth, drizzle over the cooled loaf and allow to crystallize. Garnish with more lemon zest or freshly minced mint, if you like.
Keep away from halfings and children until ready to serve. Serve with tea or coffee. Keep unused portion sealed against drying out.
