When Life Gives You Strawberries…
As mentioned elsewhere, apparently the local market over-ordered strawberries, so cartons of them were to be had for a pittance. I’m going to make a small test batch of strawberry jam in the used (“so cheap, are you sure there’s nothing wrong with it”) bread maker I picked up a while back. Very simple recipe:
- 1 cup sugar
- 1 tbs. powdered low-sugar fruit pectin
- 1-1/2 cups strawberries, washed, hulled and diced
- 2 tsp. lemon juice
On a related note, I am no longer curious what plain pectin tastes like. 🙂
UPDATE 1: It’s still cooling and setting (currently strawberry stew) but I snuck a taste and wonderfully strawberry. Must try this again when the wild blackberries come in.
UPDATE 2: 1.5 cups of strawberries looks like it will only yield about 8-9 ounces of jam. Probably need to double this recipe, possibly triple, but not sure if the bread machine will scale up batches.
UPDATE #3: Added photo of the final product all nice and jarred. These are going to family and friends.
